I changed thermostat, car antifreeze is bubbling hot from the tank, but the dashboard hot line is in the middle.

Sounds like the coolant temperature sensor has lost it's calibration. Since the computer doesn't know the engine is getting hot the cooling fans aren't coming on. HTH. -Jim
