Can I replace the a/c condensers(front and rear) without vacuuming and charging the system right away?

I am having the dash pulled to replace the front evaporator and heater core
and am doing the condensers my self and can not get all done in one week.

I wouldn't. When the system is open moisture gets in and, over time, will saturate the accumulator or receiver/dryer. This will cause the system not to cool. One of the purposes of vacuuming the system is to remove any moisture that's gotten into the system from it being open. HTH. -Jim
