Restricted exhaust, distributor Hall effect noise, fuel pump pressure.

The truck's over twenty years old, and at that age a lot of things can happen. It sounds like you have an engine cooling problem, like low coolant, restriction, or bad water pump. That's coupled with higher speed driving can cause heat-sensitive parts, like coils, to overheat and stop passing current. Air movement at higher speeds keeps the engine cool, then when slowing, if the cooling fan doesn't work properly, you get even more affects from heat, and the engine shuts down. You then wait, maybe a few minutes or so, and the when cooled, the engine can be restarted.
