replacing my stock bwm wheels with aftermarket.  BWM says it will cause all kinds of issues.  I want to know if there are any problems doing this

no problems, (try) to stick with the same size as your stock rims. So if you currently have 18" try to limit your aftermarket search to 18" rims, upgrading to a larger size 19,20 etc will damage your all wheel drive and transmission in the long run. The only other draw back is - it may void your current tire warranty that you have with the dealership...that is why they are advising you to stay away from aftermarket because, well, they wont make $ off of you anymore..

Is there any issue going from 8 inch wide to 7.5 inch wide wheels... I plan to stay with 17 inch wheels

less surface traction is the drawback - the wider the better..
