The dealer said that I need to have it done at the dealership.  There is a
special in out removal of the coolant.  Problem is I can only drain one
gallon of fluid. Car manual said that the Capacity holds 3 gallons.  Drained
and got engine to operation Temp. never emptying more than one gallon.
Is the manual wrong?

Of course the would say that, he wants your money, as this is an 08 I would recommend that you replace the thermostat and have the system flushed, not just a drain and refilled, that way you eliminate the risk of getting an air pocket and thermostat failure. The reason why you only get 1 gallon coolant out is the engine develops a vacuum in the block when draining, usually taking a heater hose loose breaks the vacuum and then it will drain, but you will never get it all out unless you remove all of the blocks core plugs, and that is something you just don't normally do.
