what would cause the temperature gage to go up and down have replaced everything radiator, water pump thermostat, cap, hoses and no water in oil next could it have anything to do with the heating sys

I cannot tell you for sure without looking at your car but I can tell you something very simple that I have seen many times. You replace everything and fill it with coolant and PRESTO!! ALL FIXED! So you drive around and all of a sudden it's overheating. Everybody forgets that in many vehicles you have to "bleed" or "burp" the system to bet the air out and make sure the coolant is flowing through the entire system.
