I want to used a 205/65 15 on my 2001 tiburon. please will it fit without issues?. I see that 205/55 16 is rwcommended.

yes those will be fine as long as they clear the brake calipers. in addition to that they will not put off the speedo because the circumference of the tire is the same the sidewall of the 15" is larger. although make sure the bolt pattern for the rims is 5 x 114.3.
