What would make my 2001 ford winstar lose all its
tyranny fluid and now it's not leaking at all

Fluid overheating, fluid will blow out the front pump seal, the vent, rear output shaft seal and even up the fill tube. Most likely cause is a plugged cooler or a cooler line has been kinked or crushed flat, if the lines look good then I would bypass the cooler in the radiator entirely and install a good auxiliary tranny cooler. I would service the trans and add some LubeGuard for Ford transmissions after doing the above mentioned work. HTH
