I have the same issue. the owners manual does not directly or provide a solution, or process/procedure to do so.

I have this problem with 2018 Jeep Grand Cherokee. Owner Manual page 28, and continuing pages give info. At 40 degrees, or lower, drivers seat and steering wheel will automatically come on. Page 30 'talks' about going into:: Auto Comfort, in Uconnect Settings, in Multimedia 'options'; to do some sourt of re-setting. This may very well override the auto heat and auto A/C. So be careful. I got a new Grand Cherokee Laredo this year and on the first cold day, noticed that the heated seat was programmed to come on automatically at a specific temp. I don't like heated seats (they came with the option package I had to order to get what I wanted), but no one can tell me how to disable this function. I've had 4 phone calls with Jeep Customer Assistance, three trips to the dealer, a chat session online with Jeep, and the vehicle is currently at the dealer. None of the Jeep people to whom I've spoken has ever heard of this problem, but none know how to address it. Their latest solution is to pull the fuse.
