My 1988 Chevy caprice is stalling when trying to start I have to hold down gas pedal

With a carburetor there's procedures for starting. Cold start: turn the ignition on and press the accelerator pedal to the floor once then release. With your foot off the accelerator pedal start the engine. Warm or hot engine: press the accelerator pedal about 1/4 of the way to the floor and hold while starting the engine. As soon as the engine starts release the accelerator pedal. HTH. -Jim
