I don't want to through the work of replacing the center speaker on my 2000 300M. does anyone know how I can just disconnect the speaker at the radio side?

Probably not, most times a wiring harness/multi-plug attaches to the head unit, you would need to isolate which wire/wires they were.

If it has premium sound there is a amplifier for the center sub, but if you can locate that you could disconnect that harness and it would be eaiser that disassembling the console just to get to the wiring for the speaker. Sorry I don't know the location of the amp on your rig but most of them are in the trunk or under the rear seat. HTH
