Freeze plug replacement

Do you have to drop the transmission and pull the
engine to change the freeze plug on a Chrysler
Town and country?

If it is the ones on the back of the engine block you can either pull the engine or the transmission, your choice, however if the plug has gone bad due to rust then the others are also weak so pulling the engine might be the best thing to do and replace them all as well as any leaking seals and gaskets, and definantly replace the rear main seal.
