I bought some 20 inch custom wheels, what is the biggest tire I can put on there and keep it stock

Obviously it will not be stock if you put 20's on a 2001 Bonneville. You will probably need to put "skinnier" tires on as indicated by the tire size number. A 235/65/R18 tire is 235mm wide, by 65% of the width for the height of the sidewall, Radial (R), tire for an 18" rim. Look for a small % to compensate for the 2 additional inches in wheel diameter.
