Bypass AC compressor

Can I eliminate the AC compressor completely
since the AC hasn't ever worked? It's now grinding
and throwing metal shavings everywhere.

You can probably put on a shorter drive belt that does not go around the compressor pulley. You would need to measure the distance and any good auto parts store can supply you with a belt.

I would not bet on the shorter belt solution. You may need to replace the compressor or at least install an idler wheel in its place.
