Check operation of the Idle Speed Controller "ISC" or Idle Air Controller "IAC" as Ford calls it. Chevy has a different name for it, but it is basically the electronic choke for the EFI system found on the throttle body. Sounds like the choke is not operating correctly.

!st is it storing any codes? It sounds like it could be the MAS air flow sensor. If the acceleration is sluggish or feels like it's starving for gas hat could be your problem.
