3.8 litre Stalls at stops

When I pull up to a stop light or sign the car dies. Car will restart after about a
minute but only if I hold the throttle to the floor. What could this be?

Most likely a fuel filter, or fuel pump issue. This is a known issue with the GM 3.8L V6. Best of luck!

And the vehicle would still run fine and have normal power at rolling speeds?

Yes. I fixed a 2000 Grand Prix the other day that had the same issue. I used a rubber mallet to bang (lightly) on the fuel tank. This freed some of the residue that collects at the bottom, and her car ran fine until she could afford the fuel filter (which I swapped yesterday). The car runs perfectly now.

Doesn't sound like a fuel issue at all. A failed fuel pump doesn't just start working again all by itself. Have the car scanned for trouble codes. The computer probably knows what's wrong. You just have to ask it.
