What can cause my temperature gage to fluctuate.

The thermostat gage on my 96 dodge
Cummins goes from 150 to 190
fluctuating up and down. I replaced
the thermostat and the same thing
continues to happen. I have read that
it could be many things including the
injectors if u have a shaky engine. My
engine runs fairly smooth Im certain
the shaking while driving is just
caused by my tires. Any ideas
