Can I run a bigger size tires on the rear of
my 95 escort and smaller on the front

No just got couple 195 14 inch laying around and need couple on back my escort didn't know if it would screw it up with 165 14 on front

For drag racing put the bigger tires on the front. I see no problem in putting the bigger tires on the back.
