You can put anything you want in there if you know how to. Nothing wrong with the 350. Your going to be looking at big blocks for what you are talking. Then you need a trany to bolt up to it and a lot of other mods to make it work.

Any "big block" the skies the limit. From a salvege yard 396-454" & rebuild it, if you're on a budget. Add afftermarket hyd cam, intake & tube headers of your choice. Shop in Jeg's or Summet Racing catalogs. To max, a Chevrolet Performance crate engine 427-572" I had a 96' Chevy pickup with a heavy duty turbo 400 trans. 3000 rpm stall speed convertor, shift kit / valve body, tube headers, a custom made 3" exhaust, & 350" V8. You can easily modify it to over 350-400 hp.

That all sounds nice there JIMZ, I have a 95 with a 97 5.7L (350) Vortec in it, that pushes 400HP. No limit on the RPMs, I love RPMs.

Then high RPM's mods are needed. Short tube headers. Rollerized needle bearing valve rocker kit.. roller cam & (valve spring) kit High perf ingnition & coil(s) pac. MSD box & cap. Solid center braided Nology spark plug wires, E3 spark plugs. Install a perf chip, Phase 2: After market heads from Chevorlet Performance or Eldelbrock . Dart, "ported & polished" etc. Phase 2: Bolt-on surecharger kit. Upgraded Holley fuel injection kit. Etc., etc., etc.
