Is there a way to keep all other doors locked when I open the driver's door on my 2017 Escape? This is a safety issue.

There should be a switch on the drivers door that locks the other door locks. Look at your owners manual if you need to.

There is no switch on the door. When I shut off the engine and open the driver's door, the passenger door unlocks. I don't like that.

I have never ever seen a car that does not have a child lock on the door next to the window switches. All my Fords do. Read the owners manual!
