My husbands cousin and her husband ride with us
a lot.  Shes a bigger woman and hes a normal
sized guy. Will i have enough room for a carseat
base/carseat inbetween them with a cherokee

Perhaps you want a wider car? The rear seat hip width is spec'd at 49.9". A Ford Expedition has 10" more rear seat width.
