What would be the best exhaust for noise an performance for my truck. I want it to have a raspy sound.

Getting that rapping sound is a difficult one, catalytic converters really tone that down, you could try the ole stand bys, Cherry Bombs, they are realatively cheap compared to the popular cat back systems out there today, the one true drawback is they don't like the heat created by today's engines exhaust so they don't last as long as the stainless steel units. HTH.

If I take the cats out will that change anything ??

It won't run right if you do, plus it will no longer pass emission testing, if you live in a state that requires testing, most of today's engines have been designed to run with a little bit of exhaust back pressure for EGR system, to do what you want to do you are going to have to get the ECM reprogrammed, put on a crossover exhaust system, be warned most exhaust shops won't touch a vehicle that has had the cats removed.

I put a Gibson cat back system on my 04 Silverado 5.3 z71 it sounds great gain some horsepower and a little fuel mileage when I can manage to keep my foot out of it.
