changed the thermostat and now the truck is overheating

Maybe the thermostat got put in backwards and will have a hard time opening up quick enough with "sensor" facing away from the hot coolant.

Under the heading of simplicity, try "burping" the system first. Take the radiator cap off with a cold engine, start 'er up n squeeze the upper radiator hose n see if lotsa air bubbles comes out o' the open cap. Make sure she heats ALL the way up before you reinstall the rad cap.
