I have a 2000 Dodge Ram 1500 v8 magnum right now wanting to see what all
motors will fit in it. I'm wanting to put a diesel in it or a bigger motor what all can
fit into it

The way it is setup you cannot deviate from a stock engine. However if you plan on stripping out all the electronics and go old school powertrain you can go diesel, or gasoline right up to big blocks. However if you live where testing is required to get it licensed then you can’t do anything.

What is my towing capacity for a 1999 dodge ram 1500 5.2 engine 3.55 gear ratio 6.5 bed towing capacity please tell me?

That all depends on how the truck is equipped. The books show anywhere form 3300 to 5200 lbs. With that gear ratio and engine I'm leaning towards the 3300 rating.
