i have a 2005 chevy 1500 with the 5.3L im having overheating problems so i replaced the thermostat and upper and lower radiator hoses and its not leaking coolant and it only happens when i sit there for more than 10 mins and i checked the fans and there kicking on when they should and i guess its not enough and i mean it cools down once i start to drive

Hook up a scanner and see what the real temperature is. Could just be bad temp sensor, pretty common on other Chevy platforms in that era.
i don't loose any and i hooked up a scanner and it shows the temperature is going up and my gauge moves up

Fan shroud? Check to make sure the radiator or the condenser is not plugged with bugs stoping the air flow. Check both radiator hoses for temperature. Maybe the radiator is internally clogged.
If the water pump is not circulating the water, this situation could happen also. If the fan is running, and the water is circulating (you could pull a hose on the pressure side for a temporary check, then I would think the new thermostat is bad. Temporarily remove the thermostat out of its housing, re-install the housing, and run the engine for long enough to determine if it's still going to overheat. (If that water is circulating with good water pressure and the fan kicks-in and runs, then the temp gauge may be reporting falsely. Normally the overflow reservoir coolant level will go down if water circulation is occurring too.)
