I want to donate my 200 Ford Focus to a school or animal charity for the sake of its parts.

Everything works but the timing belt. Not sure how to value it for tax purposes.

When you make a donation to a non profit they should give you a form with the value that they feel is adequate.

I am pretty sure you have to back up the value yourself. Check the IRS regulations but they used to require an actual appraisal if the claimed value was over $5,000 but your value is probably less than a $1,000.
