Flashing engine light while going uphill.

Hi there, I have a 2005 GMC Jimmy 4x4. I am having an issue with the
engine light flashing only while going uphill. I replaced the catalytic converter
last year, plugs and rotors. It seems like after I put premium gas and
stabilizer in it, the flashing temporary disappears. Though it started
happening again today. I already had my mechanic take it into the shop to
look at it, but he doesn't have a clue to why this is continuing to happen. I
definitely do not feel good about continuing to drive it b.c it has been very
unpredictable in the past.
