My 2015 Ford Fusion got stuck in park and
started rolling down the street. I saw there
was a recall on the shifter. When i took it to
the dealership, they said they couldn't fix it
because Ford hasn't produced the shifter
cable and it wont be made available until
October. So now my car is just sitting at the
dealership. How can i get it out of park?

That is clearly a safety issue and they should be doing back flips to help you before someone gets killed and sues Ford. First I would call the Ford's district manager, then report this to the Federal Highway Safety Administration. It's not your fault their product is defective, and they can not reasonably expect you to walk to work for three months. When there was a massive airbag recall on Honda, they provided my girlfriend a loaner vehicle free. There's no reason on the planet Ford can not do this for you on a three year old car while their engineers piss around trying to figure out what they did wrong. Don't they remember the "1972-77 Exploding Gas Tank Pinto"? Haha

Not sure if you can get it out of park....did you try another ford dealership? When did you buy it? Ford should have sent you a letter in the mail about the recall. I have a fusion myself and has an open recall and it's a 2007.
Ford will sell you one and reimburse in October My ford fusion 2015 did the same thing. They tell you its not available but will replace for $657
