Why is my temp gauge going from cold to hot after I changed my temp sensor?

I changed my temp sensor in my 2004 Chevy
Tahoe. Now the coolant gauge stays on cold for
about a mile or two then it goes to hot then back to
cold then it goes to the normal spot and stays there
for a few minutes then back to cold then hot. Is that
normal? Is it reprogramming it self as I drive it?

My recommendation is on that sensor use an oem part lots of trouble with aftermarket at least for me
