My 2001 Durango over heated and now it won't stay running unless I keep the gas down

Did you solve the overheating problem first, or are you trying to start and run the truck when it's hot or over heating?

If check engine light is on get the codes scanned. Will save a lot of guess work. If no check engine light, I would start by getting some throttle body cleaner. Take throttle body off and tear it down and clean it. Remove your Idle Air Control valve and clean or replace. Buy some MAF cleaner by CRC and clean your Mass Air Flow sensor. If no change, I would then replace my ECT (Engine Coolant Temp sensor). All of these items will give you problems with idle.

your mass air flow sensor may of shorted when it gpt wet,this will effect the idle,also check and be sure all the injectors are working .it maybe something simple like a vacume leak somewhere,check those as well,without being there to check its hard to desipher the exacty cause,but id start there,also use a code scanner tho on dodge they dont tell alot
