Storing 2017 Outback Two Months

Is it okay to store my 2017 Subaru Outback for two
months without it being started during that time?

Yes but I would fill the tank up and put fuel stabilizer in the gas. Use a battery tender to keep the battery charged up. Change the oil right before parking it as well.
