Truck chokes

Does anyone know why my truck like chokes when i floor it all the way around 35 mph and i have to let off and it it works again until 60-65mph and it chokes again?

Really not sure at this point . I have had similar issues with my 1992 CK1500 for about 6 months and have changed, cleaned, and adjusted numerous parts and sensors with no avail. Going to check with Chevrolet Motor Division next to ask if they have a bulletin on these trucks as there seems to be hundreds of them with close to the same problem.
