Why does my 1985 diesel ford f250 die while driving, and almost always dies, just after starting the truck ?

I would suspect that you have either a plugged fuel filter or water in the fuel. I am pretty sure there is a manual drain at the filter on those things, a spring loaded ring that you pull up. I think this is the water separator. you can give that a try.
