at what temp should my cooling fans come on in my 1991 pontiac grand prix

if the temps outside is 90 degrees plus engine is at 197 it can activate or engine reaches 217 degrees..

When I bought MY Senders, nearly every brand were all marked 190 degrees...217 seems to be ASKING for a blown gasket...
