rpm not stabiles and tempreture too

I am facing problem of dropping of temperature gauge while driving. It comes
automatically after some hours during driving. Moreover, once temperature
needle goes down to zero during driving, Airconditioning COOLING system
also stops working during that period. then it come back to normal ....then i
changed the thermostat and the tempreture coolant sensor i faced new
problem that the needle of tempreture gose up and down and the the rpm
getting high please help my car is chevy tb 2008

Sounds like a problem with the coolant temperature sensor or the wiring going to the sensor. If you have a bad connection and the computer loses the signal from the coolant temperature sensor the computer will assume that the engine is overheating. Because of this the air conditioning will be disabled and the computer may also speed up the idle to help circulation of the coolant through the cooling system. Is the check engine light or service engine soon light on? If so I'd suspect you have a coolant temperature sensor trouble code stored in the computer. Hope that helps! Jim

Sounds like your coolant temp sensor. Bad part, is in 06, Chevy changed the location of it from right above the thermostat, to passenger side of engine wayyyyy in the back. Pay someone to change it, I can't even get to it.
