Why is it whenever I turn off truck it leaks out my
freon then back to hot?

Sounds like you have a major leak, there should be evidence of it in the form of a greenish oily substance

Have you tried a can of ac sealer before adding freon? Might be worth a try before taking it to a mechanic who, can use dye and a special light to find the leak if need be
