Why could my temp gauge still go up Past the half way Mark?

I just got My radiator replaced and my top
hose to radiator replaced, and my thermostat
replaced. I have a brand new water pump
also. But my temp gauge/ coolant hand still
goes past the halfway Mark line and my
engine light just popped back on. Both of my
fans are coming on so that couldn’t be the
problem what could it be?

Any applicable trouble codes? Maybe relating to coolant temp sensor? Sometimes when you open the cooling system, you may get air in the system, that can effect that sensor and in turn effect the temp gage. That sensor can also effect when the computer turns on the fans. I'd use a non-contact temp gun to read engine temp in degrees F, to see if it gets hot and agrees with temp gage.
