Possibly need to open up all electrical connection one at a time and spray with contact (electrical board) cleaner and apply dielectric grease before reconnecting. Go back and make sure there is not any vacuum leaks, including intake gasket.

The coolant temp sensor could have gone bad. Iv seen plenty of times on these trucks that sensor go bad and make truck not run right. Also the throttle position sensor going bad will do this as well.
