Can u put the 87-91 turbo version engine n a 91 RX-7 convertible with the factory auto tranny?

Yes, and series 5s 89-91motors are easier to find with all the JDM imports. Its not an easy swap but its not hard either a lot of people have done them. Check out rx7club.com forums has a lot of good info for ya.
