Oil Pressure Drop while driving

I was driving about 60 MPH  the oil pressure gage dropped to 0.  It started to come up again,  the dropped again.  I pulled over and shut the engine off.  (4 minutes later)  When I started it up again  the pressure was back at 40.  No warning light came on.  I did have a problem where the oil light came on and the sensor said no oil pressure,  but the pressure was holding at 40.

Have you actually pulled out the dipstick and checked the oil level?

Was the engine bogging out or rpm's dropping or was there a power shortage like a short as these can affect the appearance of the gauge cluster's readings. Like already said above, What is the oil level on the dipstick saying?

I check the oil and it was low and needed to be changed. I put some oil in and just took it and had the oil changed. They said it look good no leaks, and its seems to be running fine now. I have a long drive tomorrow. Hope its fine now. The car does have a few glitches every once in a while.

Keep an eye on the light, if the pressure does that again, with all 7 quarts of oil still in there, then it's your oil pressure sensor. Easy fix.

Don't use the FRAM filter, and you'll be fine. I had a problem with low oil pressure. I changed everything I could. Eventually the problem was solved only when I replaced the FRAM filter with one from ACDelco.
