Gasket/spacer question for carburetor?

Can you use a spacer in between gaskets under an autolite carburetor on a
1965 Thunderbird (390) WITHOUT raising the air filter so much that the hood
doesn't close

Try to measure the clearance. You could put a board on top of the air cleaner and see if it clears when you close the hood (gently).
