Is 850 CCA vs 720 CCA going to be a big difference?

Absolutely...the bigger the cca number the better especially in sub-zero temps, so the 850 would deliver 850 amps for 30 seconds at 0 degrees....fyi, the ca number on the battery is how many amps it delivers for 30 seconds at +32 degrees
