why does it happen when i put my defrost on my ac lights up

The A/C will always come on when the 'defrost' setting is used, it runs the air through the evaporator and the cold removes moisture, then through heater core to heat

It also helps prolong the life of the AC compressor preventing it from sitting idle for months at a time.
