You really shouldn't, the computer is watching the coolant temps and if it doesn't get warm enough it won't go into closed loop and so your fuel mileage goes away. If you having problems with overheating I suggest you have the radiator flow tested, on a radiator this size it won't take much restriction to cause an overheat.
For all the trouble it would take to remove a thermostat, you could easily pop the new one it at the same time. Not having a thermostat won't mitigate overheating caused by another faulty component.
yes but why...its there to help the engine get to its operating temp asap.
