On my 1997 Chevy 1500 should I go with Shorty
headers or long tube headers

Rust my opinion but on a 97 long tubes would be the best option for exhaust scavenging effect, follow it up with dual exhaust pipes with a crossover pipe and you wind up with a nice sounding exhaust system.
