Hi my 1997 Gmc Safari on the highway runs great but when I lightily touch the
gas it hesitates, but if I give it more gas and it shifts its fine. Any thoughts

Check the idle control valve, mass airflow sensor, and fuel injectors. As they get worse, this will eventually trigger the Check Engine light.
