Could be a head gasket leak and it is going out the tailpipe as steam or the leak is small enough that it evaporates quickly somewhere in the cooing system. Have the cooling system pressure tested and head gasket evaluated.

Writing from CT and have been having the same type issues with Wifes 2014 Escape with 74K miles on it. Did the coolant recall repair a year and 1/2 ago (there was some type of fire in engine area) Ford fixed no charge. This is clearly a manufacturers issue. Current issues: Noticed coolant was low several months back and fill occasionally. The AC which was not working properly has been fine since watching coolant. Noticed this blue-grey smoke when starting car in the AM a month or so ago and it has gotten worse. Took car to a trusted local auto repair shop who is crazy busy and he said since I had recalls scheduled with local Ford Dealer, ask them to diagnose blue/grey smoke. They diagnosed as engine is bad, not sure if its a bad or cracked head, cracked block, Did a pressure test and can not be sure. They want $8000.00 to install new engine. They guy in service said we can drive as is, it may go another 60,000 miles or may go at any time. From reading all the horror stories across the country, I'm fearful of fixing at all. Even a low mileage used engine is no guarantee. Anyone have any suggestions? What would be a suggested course of action? I'm also fearful that local Ford Dealer may enter this info in system and car fax may catch. Desperate in Connecticut.....Thanks
