1988 Dodge Dakota 3.9L V6

What motors are easily interchangeable
with my truck ? It has 307k miles on it and
just blew the head gasket. I would like to
upgrade to a V8 if at all possible.

I'd look for a Magnum to build up (a 5.2) instead of a LA 318; because the motor mounts are already there for the Magnum (it's what your 3.9 uses) instead of having to fabricate everything. Dodge Rams have the 5.2 Magnum or you can use the 318 Dakota V8
