Why could my thunderbird 5.0 be running
through anti freeze like crazy

An obvious leak. Hose, radiator, water pump, gasket, etc. If it was like crazy you would smell or notice it leaking. Another area to look is the transmission fluid, is it a pink milkshake, then coolant is mixing with the trans fluid from a cracked cooler. also white smoke from the engine means your burning coolant, from a failed head gasket. Time to start investigating.
