Check oil level.

I saw this once before, the pickup screen had a crack in the tube, as long as it was covered by oil it was fine but brake and the oil would uncover the crack and the pressure would drop out, once the oil covered the crack again the pressure returned. Not good, every time the pressure drops out engine damage starts to happen. If this is a V8 then you can overfill the crankcase by half a quart, this might help if you have to drive it.

Bad oil sending unit,or what tennisshoe said, check the oil pump.

when mine did this, it was the oil pump. the sending unit was more erratic.
